I have much of the grid completed after a fashion as I don’t know how to decide which letters to omit. Can anyone help please? I will more specific if anyone is out there.

Jogamel, have a close look at the entries you've definitely got already - that shows, strongly, which letters are being omitted. The entries are all real words, so it wasn't as daunting as it first appeared.

Can you please help me with 24d (words in muddled order) shortage of CO2 stopping protecting desperate panic drinkers (7)/I have A??PNI? But because i don’t see a reason for the erroneous word order I can’t see wood for trees. Yet.

24 D. It's just a word for shortage of CO2, It's an anagram of 'Panic' inside a two-letter abbreviation for 'desperate drinkers'. (I didn't bother too much with the 'muddled order' stuff - it muddled me too much! This could means my parsing is awry, but I'm sure of my answers).

Any letters at all?

1 A is thematic. The answer to the clue itself is 10 letters. It's an anagram of need, the usual abbreviation for 'runs' and a word meaning 'smallest interval'. The definition is 'appropriate to use'.
