found it now in Chambers missing letter is C

not to me either though racing could be moving excessively?

Bunty, Racking simply comes from Moving excessively, one meaning, and To draw off from the lees, another.

Quite a clever trick to have the perimeter words as separate words which overlap to form other longer words, and then have smaller words clued, which form a kind of chain link, like SOLO, TINA and VERA, but it then becomes irritating that there isn't a clued chain-link word for the bottom row. Could he have clued the overlapping letter D? The poor editing of the plant & Greek clues also slightly marred an otherwise enjoyable puzzle.
