Add an extra letter to first word to describe a wager. This follows odd letters from this to give a high land.

24d is my parsing loose end. Have the answer, can see the definition and had assumed the extra letter goes on the end of the second word. Still can't see the wordplay

5 down 'Tries tea regularly somewhere in France' baffles me. I believe I have the missing letter to be restored but am unable to see where it should go to enable solving. And that, despite having 3 of the 4 letters in the light and guessing what the 'somewhere in France' might be. Any enlightenment much appreciated.

The extra letter goes early in the first word, leaving the answer to be found 'regularly'
