Annoyingly I cannot complete 31d 'Cook's place to practice (sic) some revolutionary sustenance' (4). I have ?ets. Also I cannot insert the barred off central letter making a 10 letter thematic word. Any clues as to where the word begins? Thanks in anticipation.
