Actually, 2d I got without Googling (a bit of obscure knowledge, probably from Dorothy Sayers). That told me what to Google to get the other ones, though!

finished now but only because I used all of your hints and tips - couldn't parse some of it , for example I got the answer to 8,6,d but have no idea why it's numeric...didn't enjoy it much

The clue does say "...number of 20....". I didn't bother parsing it fully, though - too irritated!

It is to do with Roman numerals as used in Crosswordland
V from vegetarian = five
odd letters from MiX aLl gives MXL (thousand and forty)
Except that this is not actually what the Romans used.

Agree with you completely - could only get 8/6 by Googling - be amazed if anyone got this from the clue alone (unless they knew the number) - wordplay is dreadful. Vegetarian starter - V = 5 in Roman Numerals; mixall oddly - MXL = 1,040 - so we have VMXL but this is not how Romans would write 5,040 (MMMMMXL) so we are being asked to guess V/5 M = 5,000 and add XL.
