10a think of steak for rare.
19a - I am not sure how to explain it.
21a ditto.
23a regularly wants you to find alternate letters from sand wasps and then add an abbreviation for time.
27a is 4 letter creature and two words reversed one is a 4 letter word for a warning on a golf course and a 3 letter word for a canine.

In 19a “all but” means “almost” (as it’s defined in Chambers) which is then applied to the words that follow.

Enjoyed this one, but agree on the trickier side.

…Chambers also defines “all but” as “everything short of” which is perhaps more useful here

Gave up after an hour with less than half solved. Looked up answers and glad I bailed out as i would never have got most of the missing.
11a I can't see how the answer means firm .
21a I had another first word and I can't see how the solution works for itemizes.
27a Can't parse this

Hardest of the year for me by a long chalk

Loubyloo,
27a - 4 letter ‘creature that eats’, then reversal of (indicated by ‘flipping’) ‘canine’ (3) and ‘warning’ (4).

I enjoyed this, a bit tricky in parts with some nice clues. 6d stands out for me, also liked 24d, 20d. I got the spoonerism pretty quickly (for me) so that was nice.

Not sure that this was trickier than recent Everyman puzzles which I think have all been trickier than in the past.

All the best everyone, and thanks to Everyman.
