It's got to be Table Mountain from "Looming in South Africa" but I can't see the word play, any help welcome.

A Table is "a broad flat surface on a gem', so a 'facet of (a) diamond' and Mountain is a surplus (beef mountain, say)

I've just checked Chambers and the Mountain/surplus bit is fine - a mountain can be 'a large quantity or excess, esp of agricultural., dairy etc products bought up....'
