Ah - I assumed that 'in' denoted one meaning within another. For example, the clue could have just been 'crews in boats' but both 'seconds' would then have been redundant.

I’m looking for hints for 20a please. I think I have the last 4 letters, both from the clue and to rhyme with 11a as seems to be the Everyman style, but can’t see any plausible answers that would fit.
20a - Firs 6 letters are a two word phrase describing what "residents do" then 2 letters for a "doctor"+ 2 letter "expression of pain" + 2 letter "uncertainty". - definition is "guts" as in 'resolve/ fortitude etc..

19d is a synonym for demonstrating, as in “showing”, and it is also what is often done to dough etc on Bake Off. Leaving the dough/bread to rise is a more familiar term to me, but they seem to call it this other word on the programme
