Can I have more of a clue, e.g. one of the elements of this long fish name? My childhood was not rich in small fish. I am assuming it's an anagram of What's deer it's. I can find Shad twister, written as two words and missing an e...

It's not an anagram. Took me ages to parse. It's one of those 'reverse clues' where part of the solution is itself an instruction. Hard to say more without being too explicit.

A deer is an elk+c for caught+it's, all reversed and then followed by the word 'back' to say you have reversed it.

6d definition is more "sharply moving".

19a, it's a double def.
