Despite there being no instructions on the online version, it seems that there are a few non-defined clues which lead to answers which are of a theme. Is anyone else seeing that, or am I seeing something which isn't there? :)

The instruction has now appeared on the online version. As you will all probably have predicted: 'Five 12s are not otherwise defined in their clues.'

Two questions:

Any HINTS on 17ac
.....having skimmed the fat, say (5)
?T?E?
(The previous clue/solution doesn't seem to me to be relevant)

19ac I have a solution that must be correct but I can't parse it - hints again, please?
Record about spots compiler has to drop fast (5-4)

"say" is what's left to enter when you've "skimmed" a much-used kind of fat (otherwise known in these circles as "goat"!)
