Thank you both, but I still do not see the build. Also, is ARLES (a preliminary payment) supposed to equate to 'A golden hello'?

a "golden hello" is similar to a "golden handshake" except it's given when a person starts work rather than finishes. Or do you mean how is the other bit of the clue arrived at?

Steve - sorry for delay - been out. I think the cryptic bit is R (latin recipe, take) inside ALES (synonym for feasts)
"back in the day" means ARLES is an old fashioned term
