A great puzzle. Ifor never disapppoints. Many years ago I spent a year working in Austria and heard a German version of one of the songs involved. The chorus of that version has been an earworm since I finished this.

12 - a downhill slope in skiing (ch for 'chart')
23 - your 'r' should be M ('must' is unfermented wine).
