Surprisingly, the NYT does not consult Chambers for its word list. It's perfect valid American.

According to the NYT help page its Wordle word list is curated by the “Oxford Dictionary”, whichever version that is

The OED itself lists filet as a valid spelling of fillet, with the first reference from 1841. So I guess it's UK English too.
