53a Rebellious tribe in America kill unit deprived of cover (5)
Might be 'Iceni'.

55a Human resources entirely died during male American slavery (9)
Must be 'Thralldom' - human resources entirely died giving 'hralld' inside 'tom' for male, but where does 'American' fit into it?

38d Intelligence and excellence about one restaurant worker (10)
Might be 'headwaiter'.

Thanks.

Hello Strangelybrown - I can answer two of your queries, but the "headwaiter" one is also puzzling me.
53 A is ICE (kill) + NI ("unit" without the outside letters)
55A is HR (human resources) + ALL D (entirely died) inside TOM (male).

The other two I can't fathom are:-
29 A - "Artist dividing using shade" (6) -R-I-H
and 32 D - "Watson's colleague lacking potassium about to have a bite to eat" - this looks like CREATIC, but I can't see where Watson's colleague fits in.

Shade is sometimes used as a term for a ghost.

Yes, of course - now all we're left with is the puzzling "headwaiter"

According to Chambers one definition of “water” is “Class, quality, excellence, esp in the phrase of the first or purest water”.

A new one on me
