Evening all!

Looking for an explanation (I think!)

1d Sprightly old waitress (5)
?I?P?
I am assuming the whole means sprightly and is therefore NIPPY. But what do old waitresses have to do with it?

Thank you Chris E. That's my something new I learned for today.
I think Lyons Corner Houses were around when I was a littlie but I was too young to be paying much attention!

Is this clue flawed?

The answer would seem to be DRAT, but "in return" this would be TARD rather than TRAD?
