The charity is MENCAP … the m moves

The other one is GNAT (insect) around PER (through in a Latin sense) all reversed. I didn’t know the word but it means sea cucumber.

It must be "ether" (being a "number") but I'm struggling with the parsing. I thought it might be cattle-based but gave up on this and tried to find some manipulation of the number three from the clue. Again, I gave up on this.

Any suggestions?

It's N(umber) subtracted from "nether" as in 'nether/lower regions'
