I’m fairly new to this. What does “listed in alphabetical order of entry” mean for the thematic clues?

It means that the thematic clues, 'No starter ...', 'Cars ...', etc. are listed in alphabetical order according to their changed forms.

Thanks all for the hints. I’ve got everything now - grid, thematics, changes, and the “further example”. But I don’t quite understand how 26d and 31a fit their clues!

31, dry up, be quiet, "sh" + scots word for iron.
