Crossing letters suggest this might be 'carbon paper' but I can't see why, apart from the definition.

A KATA is a formal sequence of karate moves + LOG (homophone)

Thank you Quisling, 'c-ream' was clever (too clever for me) but the obscure specialist knowledge required the karate clue is annoying.
