Am having problems parsing the very last clue:

52a Volunteers half of the City's stock (5)

I have T-L-N, so we have TA for Volunteers and LON for half of London, but why does talon mean stock? All help gratefully received.

Talon meaning stock is listed, defined as such, in Chambers.

If you look up talon in Chambers it’s definition 4. The cards remaining after a deal.

It's always good to give the clue, details of the number of letters, details of any you have. Not everyone has a copy of the puzzle, so it's not easy to help!

I did not know the format makes sense.

Spare Ribs, cut of meat.
Spare, refrain from using
Ribs, bars.

The clue is,
"Cut? Refrain from using bars (5,4)"
Spare ribs.
