I think it may be 'Barmmes'

Mme (French lady) inside Bars (brasseries)

This could be Scots slang for Barmpots (coofs)


Riser could fit the definition for (Rear, no tread) as on a staircase. Cannot work out the rest of the wordplay. But it might be something you can work with.
