43a "With cutlery, pare outer part of joint" (10)

S?L?E?S?I? Looks like it ought to be SILVERSIDE for the joint but, unless I've got 32d (ACADEMIC DRESS) wrong, could it be SILVERSKIN or SILVERSHIN?

Cutlery is "silver", pare is "skin".
Silverskin is a kind of membrane around a joint, I believe.
