I have a question about a clue in Slormgorm's puzzle last week.

(G)Ripe + N = RIPEN
I understand the parsing … but I still need help.
What is "Nolly"?

It's the jokey name for Noilly Prat, fancy champagne. PS my spelling could be wonky, I don't drink!
