Could someone please explain to me why ES means "french art" in a crossword clue? Thank you,

It's the old-fashioned use of 'art' for 'are' - such as in 'how great thou art'. Es is the French for are/art.

The clue was
"continue to talk French art with East African"
The solution was GABONESE
