The Quick Solve gives AMYLOGEN. AM(Y LOG)EN. Don't get the adherence bit. It's a starch compound - perhaps it makes dough glodgy?

Well - a word one uses every day!.. I've just tried to find it in Chambers, and it's not there - other derivatives, but not that. It's the starch that would make it gluey - remember flour and water paste at school?
