Sadly easy to finish, but 3 places where I'm not quite sure how the clue works. Any hints?

1,8 Lack of bottle, but not hot dogs (4,4)
How does "dogs" give the second word?

22 Bar turning up large American Rye starters, followed by Bells (7)
Where does the 4th letter come from?

3,29 "Hackney's parking area burden", I utter (4,4)
Is "utter" OK for the second word? I can see a context in which it is close, but is it close enough?

Yes the second word is fine by me. utter rubbish e.g.

I've altered a word for "pure and simple" to give the first 4 letters, but, on closer inspection, "back to front" isn't what I've done (as I thought it was!). I've not chosen the "ing" ending, though, as mine derives from "man"

That's what I thought I had done, but I had a blind spot when you asked!

Doesn't really work in a down clue, though - "bottom to top"?
