That fits but still not sure of the reference to Australian. Also that first s is also the first letter of a 7 letter word :
craft Uncle criticises? (7)

for which I was thinking Uncle Sam was the reference so that part would agree.

us = you and me
tin = can outside, ie biting,...
...a = an Australian
