I'm not sure what letters/spaces you are indicating, but VINEGARY makes sense (anag. IVY around anag. ANGER)

VINEGARY is correct. Despite the fact that I had a letter wrong ( tenderises instead of tenderiser), and I had a bit of a typo when giving you the clue, you still got it. Well done chrise.
