Need help parsing these (assuming they're correct)

Old farmer Ted's shed down - MOULT (Shed)

Idiot forgets name, say - UTTER (Say) I can see 'Er' but the rest..

Brendan, why have you put shed and say in brackets? They are not shown in brackets in the paper.
