I've finished the crossword, but can't seem to parse the clue for 1a,

Saucier boss is heartless (4)

I have C_E_. I think it must be Chef - Chef, but 'Saucier' ?

Am I missing something, any help appreciated

It's meant to read Ch(i)ef

A Saucier is a Chef

Saucier = chef
boss = chief (lose the middle letter)

I thought I'd put that trevor, Ch(i)ef to leave Chef.

But I must say that I have never heard of a 'Saucier' being a kind of chef, and that is what was confusing me, thanks for the link mamya, I have learnt something new with that
